Baked sausage with potatoes and sage is a really easy dish with very little prep time. Then the oven takes over and does all the magic to create a delicious dinner.
A couple of days ago, I had some Italian sausage and was staring at it, wondering what I could make for dinner that was quick and easy.
It was 6 pm, I had just gotten home from work, and I was in no mood to cook. The sausages almost went back in the fridge in favour of take-out.
Now, the beauty of sausages is that they are already seasoned with herbs and spices. So I put the sausages in a casserole pan, lined with parchment paper for easy clean-up, cut a few potatoes into chunks, and poured a little water into the pan.
The whole thing looked kinda boring.
In my head, I was running through the list of herbs in my garden. Aha – sage!
I went outside and picked a handful of garden sage herb leaves, and threw the leaves on top of the sausage and potatoes. Much better.
I baked the sausage, potatoes and sage in the oven at 400°F for 50 minutes, until the potatoes were tender and my husband came home from work. While the oven was doing its magic, I prepped a salad and checked my email.
The sage leaves crisped up in the oven, and added so much flavour to the sausages and potatoes. Much better than take-out.
You can use any sausage for this simple bake. And if you don’t have sage in your herb garden, try it with rosemary or thyme, or a few cloves of garlic thrown in – you don’t even need to peel the garlic 🙂
